Start with your venue, not your menu. Some Prague venues have a fixed in-house kitchen, some have an approved supplier list, and some — particularly gardens and heritage halls — allow a free choice but provide almost no facilities. Which of the three you are dealing with determines your options and your costs more than any other single factor.
A clear per-head figure, with food, drinks, staff, tableware, glassware and linen either included or itemised. Delivery, setup, service hours and clearing should all be visible. If the venue requires an equipment kitchen to be brought in, that cost belongs in the same quote rather than appearing later.
Agree the last hot service and the last bar service in advance, especially at a heritage venue with a curfew. Late food — Czech weddings often serve something substantial around midnight — is one of the details guests consistently remember.
